Produced by Melkalti Trading and roasted at Will & Co HQ in Bondi. This delightful single origin is the product of a careful, hands-on approach from smallholder coffee farmers throughout the region. Every cherry that goes through the processing facility is hand-picked and hand-sorted to ensure it meets Melkalti's strict quality standards. Those that make the cut are pulped using a locally made processing machine, then undergo wet fermentation for 48 hours before being carefully dried for 10-12 days. Throughout the drying process. The coffee is closely monitored to ensure the beans reach a uniform and optimal moisture content.
Born and Bred in Bondi, we’re on an eternal quest to share the world’s greatest coffee with the world’s greatest humans (that’s you). Our journey began in 2013 when three best mates set out to create the perfect blend to accompany their early morning surfs, and Eight-O-Eight was born. Shortly after, we began supplying to local cafes in the Sydney area, and now you can find our coffee pouring daily at cafes across Australia. Learn More.
