Produced by Humberto Calderón at La Primavera Farm and roasted at Will & Co HQ in Bondi. This exotic microlot is 100% Gesha, an exceptionally high-quality coffee that is often considered to be one of the best-tasting coffee varietals in the world. Pitalito, Huila – the region in Colombia in which it was grown – is known for perfect growing conditions, including volcanic ash soil, optimum rainfall, high altitude and moderate temperatures. Each coffee cherry is carefully hand-picked in order to select only the ripest ones, then fermented for 40 hours in an anaerobic environment, allowing complex flavours to develop. After, they are pulped, gently washed and sundried until ideal moisture content is achieved. The resulting flavour is unreal. Calderón comes from a multi-generational coffee producing family. He and his brothers grow different varietals including Gesha, Pink Bourbon and Caturra. They also grown other crops on their land such as plantains, cassava and sugarcane.

    Roasted too dark for a filter

    Disappointed by the darkness of the roast. Certainly not a filter roast by any means. Led to a lot of roasty flavour notes in the cup instead of what you would expect from a Colombian Gesha.
