Smooth, spiced, and just sweet enough — our Banana Bread Latte takes its cue from the classic café combo: a warm slice of banana bread and a damn fine brew. It’s the ultimate comfort drink for crisp mornings, cosy afternoons or whenever you need a little pick-me-up.
Made with a golden caramelised banana syrup (shoutout to our epic barista Becky for the inspo), rich espresso and a sprinkle of cinnamon - this winter warmer is tried and tested by the Will & Co crew, ready for you to recreate at home or enjoy at our HQ Tasting Bar in Bondi.

Caramelised Banana Syrup Recipe
This recipe makes 10+ servings. Store in an airtight container or glass jar in the fridge and use within 2 weeks for peak freshness.
Ingredients:
- 2 Ripe Bananas, Sliced
- 100g Brown Sugar
- 110mL Water
- 3 tsp Ground Cinnamon
- 1 tsp Vanilla Extract
- 1 tbsp Butter
Instructions:
- Melt butter in a small saucepan over low heat.
- Add bananas and sugar, cooking on low-medium heat until caramelised.
- Add water and mash bananas with a wooden spoon. Simmer for 2 minutes.
- Remove from heat, let cool slightly, then stir in vanilla extract and cinnamon.
- Blend or strain using a sieve to your preferred texture.
- Taste and adjust sweetness as needed.
Banana Bread Hot Latte Recipe
Ingredients:
- 30mL Espresso (1 Shot)
- 150mL Milk
- 2 tsp Banana Syrup
- Ground Cinnamon to Taste
Instructions:
- Rinse your cup with hot water to pre-heat
- Extract your espresso shot, and mix in banana syrup, making sure to give it a good stir
- Steam milk
- Pour your best latte art
- Finish with a sprinkle of cinnamon on top
Banana Bread Iced Latte Recipe
Ingredients:
- 60mL Espresso (Double Shot)
- 150mL Milk
- 3 tsp Banana Syrup
- Ground Cinnamon to Taste
- Optional: Thickened Cream
Instructions:
- Fill your glass with ice and add milk.
- Extract your espresso into a separate cup, and mix in banana syrup, making sure to give it a good stir.
- Pour over the milk and mix well.
- Feeling extra? Whip together 3 parts thickened cream, 2 parts milk and 1 part banana syrup to create a tasty banana cold foam topping. We recommend stopping short of a proper whipped cream so the coffee can cut through. Dollop on top of your bevvy.
- Sprinkle with cinnamon and enjoy.
