Walk into any of the four Parx Coffee House locations across Sydney’s West, and you’ll feel an instant sense of warmth that hits well before the first sip of coffee. It’s the kind of place where you’re greeted like a mate, where brunch feels just a little more special and where the coffee is always on point. That feeling? It’s no accident – it’s exactly what founders Jessica and Rachelle set out to create when they opened their first Parx café back in 2018.
“At the time, there weren’t many options nearby that offered what we were craving,” Jessica says. “We wanted a place that brought good coffee, honest food, and community together – so we decided to build it ourselves.”
That first site in Abbotsbury felt like a big risk, but the locals showed up in droves. Word spread fast, and before long, Parx was more than just a neighbourhood café – it was becoming a fixture of daily life. “The response was incredible,” Rachelle recalls. “It gave us the drive to keep going and keep growing.”

Building a Community, One Cafe at a Time
Fast-forward seven years, and Parx has grown to four buzzing venues – Abbotsbury, Gregory Hills, Prestons and Cranebrook. Each space feels like it truly belongs in its neighbourhood – intentionally designed to reflect the local community it serves – but there’s a common thread tying them all together.
“No matter which Parx you walk into, you know you’re in one of our cafés,” Jessica says. “It’s the welcoming atmosphere, beautifully crafted food and coffee, and the genuine connection with all our customers. That’s what makes Parx, Parx.”
That connection isn’t just about friendly service – it’s woven into the way Parx has become part of the everyday fabric of life in each suburb. “We’re not just a café – we’re part of people’s daily routines, their milestones, their memories,” Jessica says. “From supporting local schools and events to remembering a regular’s coffee order, we try to be a real part of the neighbourhood. That sense of connection keeps us grounded and reminds us why we do what we do.”

Brunch Done Right
Of course, the menu has a big role to play in the Parx experience. Designed to be fresh, seasonal and a little indulgent, it’s food you want to linger over.
“It’s hard to pick a favourite, but people love our eggs benedict and salmon bowl,” Jessica says. “We’re constantly evolving and experimenting. Inspiration comes from seasonal produce and just listening to what our customers love. Behind the scenes, there’s a lot of collaboration and creativity that goes into each new dish.”
And then there’s the coffee, which always has folks coming back. Every cup is brewed with the same care and consistency that’s been part of Parx since day one – helped along by a partnership that’s just as enduring.
A Shared Love of Coffee
Will & Co has been part of the Parx journey since their very first café opened its doors. “We were drawn to Will & Co not just for the coffee, which is consistently exceptional, but for the values behind the brand,” Jessica says. “There’s a real sense of craft and care in what they do, and that aligns with how we run Parx.”
From that first site in Abbotsbury to four thriving venues today, the partnership has only deepened. “They’ve supported us through every stage of growth,” Rachelle adds. “They’re more than just a supplier – they’re part of the Parx family.”
Staying True to Parx
Growth can often come with challenges, but for Jessica and Rachelle, keeping the essence of Parx front and centre through that growth has been non-negotiable.
“It comes down to culture,” Jessica explains. “We’ve built a team that lives and breathes our values, believing in the Parx vision as much as we do. Every new venue is carefully planned to reflect who we are, not just what we do. We’re not chasing trends – we’re creating spaces that feel good, taste great, and stay true to our roots.”
Safe to say, it’s working. Four cafés later, Parx is still what it set out to be: a local hub for good coffee, good food, and genuine connection. It’s the place where milestones are celebrated over brunch, where the barista knows your order before you say a word, and where the neighbourhood feels just a little closer.
