How to Make Our Croissant Cold Foam at Home

on Oct 15, 2026

One of our favourite brekkie combos is coffee and a croissant - a classic. So, when we saw our mates at Mr Black playing with a croissant cold foam, we knew we had to give it a whirl.

Introducing the Will & Co Croissant Cold Brew – cold brew sweetened with a hint of vanilla and topped with croissant-infused cold foam. Pouring for a limited time at our Bondi Tasting Bar, this one’s well worth a try. And if you’re keen to recreate it at home, we’ve got you covered with a recipe to whip up your own batch. Scroll on down and check it out.

Croissant Cold Foam Recipe

Recipe makes approximately 8 serves.

Ingredients:

  • ½ Croissant, torn into small pieces (day-old or slightly stale works even better)
  • 1 Cup Cream
  • 2 tbsp Sweetened Condensed Milk
  • Pinch of Salt

Instructions:

  1. Toast the croissant: Add croissant pieces to a dry pan over medium heat or pop in the oven at 175°C for 5-8 minutes, until golden and fragrant.
  2. Warm the cream: Add cream, condensed milk and a pinch of salt to a small saucepan. Warm gently until steaming, but don't let it boil.
  3. Steep: Remove from heat, add toasted croissant pieces and cover. Leave to steep for 20-30 minutes.
  4. Strain: Pour mixture through a fine-mesh sieve or cheesecloth, pressing the croissant pieces to get as much infused cream as possible. Discard the solids.
  5. Chill: Pop infused cream in the fridge for at least an hour, until completely cold.
  6. Whip: Whip the cream using a milk frother or immersion blender. Keep an eye on the texture - you want a creamy foam, not whipped cream.
  7. Enjoy: Pour generously over your coffee of choice and sip away.

At our Tasting Bar, we’re serving this over cold brew, sweetened with a touch of vanilla. But, as always, we reckon you can enjoy however you like. The sky’s the limit.
