Produced by Herminio Mendoza and roasted at Will & Co HQ in Bondi. Expertly produced in the region of Satipo, this exceptional micro-lot is the product of Hermino Mendoza - well known for his hands-on farming approach to ensure high quality and consistency. During the farming process, the cherries are selectively hand-picked to guarantee optimum ripeness. Once picked, the coffee is fermented for 24 hours before being de-pulped and washed. The coffee is then transferred to dry over a 10-day period to reach an ideal moisture content, allowing a beautifully balanced flavour profile to develop.
