During the farming process, the cherries are selectively hand-picked to guarantee optimum ripeness. Once picked, the coffee is fermented for 24 hours before being de-pulped and washed. The coffee is then transferred to dry over a 10-day period to reach an ideal moisture content, allowing a beautifully balanced flavour profile to develop.

Our journey began in 2013 when three best mates set out to create the perfect blend to accompany their early morning surfs, and Eight-O-Eight was born. Shortly after, we began supplying to local cafes in the Sydney area, and now you can find our coffee pouring daily at cafes across Australia.
